Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Place the listed items in a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the stove and leave to cool fully. Pour into a sealable bottle, seal keeping it in the fridge, where it will keep for around a month.

Preparing the Premix: Pour the specified liquids into one sizeable container, allow it to infuse for one hour, then filter it preferably using a fine cloth, so it's completely strained.

When ready to serve: Add 85ml of the cocktail base to a stirring glass filled with ice, and stir carefully for one minute to chill. Strain to a frosted cocktail glass or similar, top with some cranberries adding the final touch using a quick spritz of the essential oil over the drink.
